Description
A delicious baked cod dish with a creamy coconut sauce, seasoned with garlic, ginger, and lemon juice.

- 4 pieces cod fillet
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 cup coconut cream
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 200°C (400°F).
- Pat the cod fillets dry and season both sides with salt and pepper.
- Heat the olive oil in an oven-safe skillet over medium heat.
- Sear the cod fillets for 2 minutes on each side until lightly golden, then remove them from the skillet.
- Add the minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
- Pour in the coconut cream, then stir in the lemon zest and lemon juice and bring to a gentle simmer.
- Return the cod fillets to the skillet and spoon some sauce over each piece.
- Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the cod is opaque and flakes easily.
- Remove from the oven and sprinkle the chopped parsley over the fish before serving.
