Description

A delicious baked cod dish with a creamy coconut sauce, seasoned with garlic, ginger, and lemon juice.


Ingredients

  • 4 pieces cod fillet
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 cup coconut cream
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Pat the cod fillets dry and season both sides with salt and pepper.
  3. Heat the olive oil in an oven-safe skillet over medium heat.
  4. Sear the cod fillets for 2 minutes on each side until lightly golden, then remove them from the skillet.
  5. Add the minced garlic and grated ginger to the skillet and cook for 1 minute until fragrant.
  6. Pour in the coconut cream, then stir in the lemon zest and lemon juice and bring to a gentle simmer.
  7. Return the cod fillets to the skillet and spoon some sauce over each piece.
  8. Transfer the skillet to the preheated oven and bake for 8–10 minutes, or until the cod is opaque and flakes easily.
  9. Remove from the oven and sprinkle the chopped parsley over the fish before serving.
