Description

A refreshing salad combining chickpeas, black beans, and fresh vegetables.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chickpeas, black beans, cherry tomatoes, red onion, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss well to combine.
  4. Let the salad sit for at least 10 minutes to allow flavors to meld.
  5. Serve chilled or at room temperature as a side or light main dish.
