Ingredients

  • Whipped cream
  • Chocolate ganache
  • Crumbled cookies or graham cracker crumbs
  • Pinch of salt
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the Oven: Preheat your oven to 325°F (163°C).
  2. Prepare the Crust: In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
  3. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, mixing well. Add eggs one at a time, beating after each addition. Mix in the vanilla extract, lemon juice, and a pinch of salt. Stir in the heavy cream until smooth. Add several drops of blue food coloring to achieve the desired shade.
  4. Assemble the Cheesecake: Pour the filling over the prepared crust, spreading evenly. Tap the pan gently on a counter to remove air bubbles.
  5. Bake: Place the cheesecake in the oven and bake for 50-60 minutes, or until the center is just set and a little jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  6. Chill: Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.
  7. Add Toppings: Before serving, top with whipped cream, drizzle with chocolate ganache, and sprinkle with crumbled cookies.
