- 1/4 cup melted butter
- 24 oz (680g) cream cheese, softened
- 1 cup granulated sugar
- 1 cup heavy cream
- 4 large eggs
- 2 teaspoons vanilla extract
- Blue food coloring
- Whipped cream
- Chocolate ganache
- Crumbled cookies or graham cracker crumbs
- Pinch of salt
- 1 tablespoon lemon juice
Instructions
- Preheat the Oven: Preheat your oven to 325°F (163°C).
- Prepare the Crust: In a medium bowl, combine chocolate cookie crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the sugar, mixing well. Add eggs one at a time, beating after each addition. Mix in the vanilla extract, lemon juice, and a pinch of salt. Stir in the heavy cream until smooth. Add several drops of blue food coloring to achieve the desired shade.
- Assemble the Cheesecake: Pour the filling over the prepared crust, spreading evenly. Tap the pan gently on a counter to remove air bubbles.
- Bake: Place the cheesecake in the oven and bake for 50-60 minutes, or until the center is just set and a little jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Chill: Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 4 hours or overnight.
- Add Toppings: Before serving, top with whipped cream, drizzle with chocolate ganache, and sprinkle with crumbled cookies.
