Ingredients

  • 1 cup heavy cream
  • 1 cup semi-sweet chocolate chips
  • 2 large egg whites
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and chopped
  • 2 tablespoons granulated sugar (adjust based on sweetness preference)
  • 1 tablespoon lemon juice
  • 1 cup chocolate cake, cut into small pieces (homemade or store-bought)
  • Fresh strawberries, for garnish
  • Whipped cream (optional)

Instructions

  1. Melt the chocolate chips in a double boiler or microwave until smooth. Let it cool slightly.
  2. In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.
  3. In another bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
  4. Fold the melted chocolate into the whipped cream gently, then fold in the egg whites until fully incorporated. Set aside.
  5. In a blender, combine the chopped strawberries, sugar, and lemon juice. Blend until smooth.
  6. Taste and adjust sweetness if necessary. Set aside.
  7. Bake a chocolate cake, or use a store-bought cake, and let it cool. Cut it into small pieces or cubes.
  8. In a clear glass or parfait dish, layer the components as follows:
  9. Start with a layer of chocolate mousse.
  10. Add a layer of strawberry puree.
  11. Follow with a layer of cake pieces.
  12. Repeat the layers until you reach the top, finishing with a layer of chocolate mousse.
  13. Cover the assembled parfaits and chill in the refrigerator for at least 1 hour before serving.
  14. Before serving, garnish each parfait with a fresh strawberry or a dollop of whipped cream for an additional touch.
