Description
Delicious layered parfaits with chocolate mousse, strawberry puree, and cake.
Ingredients

- 1 cup heavy cream
- 1 cup semi-sweet chocolate chips
- 2 large egg whites
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and chopped
- 2 tablespoons granulated sugar (adjust based on sweetness preference)
- 1 tablespoon lemon juice
- 1 cup chocolate cake, cut into small pieces (homemade or store-bought)
- Fresh strawberries, for garnish
- Whipped cream (optional)
Instructions
- Melt the chocolate chips in a double boiler or microwave until smooth. Let it cool slightly.
- In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.
- In another bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Fold the melted chocolate into the whipped cream gently, then fold in the egg whites until fully incorporated. Set aside.
- In a blender, combine the chopped strawberries, sugar, and lemon juice. Blend until smooth.
- Taste and adjust sweetness if necessary. Set aside.
- Bake a chocolate cake, or use a store-bought cake, and let it cool. Cut it into small pieces or cubes.
- In a clear glass or parfait dish, layer the components as follows:
- Start with a layer of chocolate mousse.
- Add a layer of strawberry puree.
- Follow with a layer of cake pieces.
- Repeat the layers until you reach the top, finishing with a layer of chocolate mousse.
- Cover the assembled parfaits and chill in the refrigerator for at least 1 hour before serving.
- Before serving, garnish each parfait with a fresh strawberry or a dollop of whipped cream for an additional touch.
Notes
- This dessert can be made ahead and stored in the refrigerator for a quick treat.
- Adjust sugar in the strawberry puree based on the sweetness of the strawberries.
