Description

This delicious Chicken and Broccoli Bowtie Pasta is a quick and easy meal that’s perfect for any night of the week!


Ingredients

  • 8 oz bowtie pasta
  • 1 lb boneless skinless chicken breast cut into bite-size pieces
  • 2 cups broccoli florets
  • 4 tbsp unsalted butter
  • 3 cloves minced garlic
  • 1 tsp ranch seasoning mix
  • 1 lemon zested and juiced
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh chives
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil, add bowtie pasta, and cook according to package directions until al dente. Drain and set aside.
  2. Meanwhile, heat olive oil in a large skillet over medium-high heat and add chicken pieces. Season with salt and pepper and cook until golden brown and cooked through, about 5–7 minutes.
  3. Push the chicken to one side of the skillet, add butter and let it melt, then stir in minced garlic and ranch seasoning. Cook for 1 minute until fragrant.
  4. Add broccoli florets, lemon zest, and lemon juice to the skillet. Toss to coat and cook until broccoli is tender-crisp, about 3–4 minutes.
  5. Add cooked pasta to the skillet and toss everything together. Stir in Parmesan cheese, chopped parsley, and chives until evenly distributed.
  6. Taste and adjust seasoning with additional salt, pepper, or lemon juice as desired. Serve hot.
