Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper. In a medium bowl, mix the graham cracker crumbs and sugar, then add melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan to form the crust.
- Make the Cheesecake Layer: In a large bowl, beat the cream cheese until smooth. Add sugar and continue to beat until creamy. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract. Pour the cheesecake mixture over the crust and spread evenly.
- Prepare the Apple Layer: In another bowl, mix the diced apples with sugar and cinnamon until well coated. Spread the apple mixture evenly over the cheesecake layer.
- Make the Streusel Topping: Combine flour, brown sugar, oats, and cold butter in a bowl. Using a pastry cutter or your fingers, mix until crumbly. Sprinkle the streusel evenly over the apple layer.
- Bake: Bake in the preheated oven for 45-50 minutes or until the top is golden brown and the edges are set. Remove from the oven and let it cool to room temperature.
- Drizzle with Caramel: Before serving, drizzle with caramel sauce. Refrigerate for at least 2 hours to firm up.
