  • 1 egg (for egg wash)
  • 1 cup additional fresh raspberries for garnish
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface. Cut the pastry into circles using a round cutter. Place the circles on a lined baking tray and brush with egg wash for a golden finish. Bake for about 15-20 minutes or until puffed and golden. Allow to cool.
  2. Prepare the Cream Filling: In a bowl, beat together the cream cheese, heavy cream, granulated sugar, and vanilla extract until smooth and fluffy. Adjust sweetness if necessary by adding more sugar.
  3. Prepare the Raspberry Filling: In a saucepan, combine fresh raspberries and a bit of granulated sugar over medium heat. Cook until the raspberries start breaking down and form a thickened sauce. Allow to cool.
  4. Assemble the Dessert: Slice the puff pastry circles in half horizontally. On the bottom half, spread a layer of cream filling. Add a layer of raspberry filling on top of the cream. Place the top half of the pastry circle over the fillings.
  5. Garnish: Dust the top with powdered sugar using a sieve. Garnish with fresh raspberries and mint leaves if desired.
