Description
A delightful dessert featuring creamy filling and fresh raspberries wrapped in flaky puff pastry.
Ingredients
Scale
- 1 package puff pastry sheets (store-bought or homemade)
- 2 cups fresh raspberries
- 1 cup heavy cream
- 8 ounces cream cheese
- 1/2 cup granulated sugar
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1 egg (for egg wash)
- 1 cup additional fresh raspberries for garnish
- Fresh mint leaves (optional, for garnish)
Instructions
- Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets on a lightly floured surface. Cut the pastry into circles using a round cutter. Place the circles on a lined baking tray and brush with egg wash for a golden finish. Bake for about 15-20 minutes or until puffed and golden. Allow to cool.
- Prepare the Cream Filling: In a bowl, beat together the cream cheese, heavy cream, granulated sugar, and vanilla extract until smooth and fluffy. Adjust sweetness if necessary by adding more sugar.
- Prepare the Raspberry Filling: In a saucepan, combine fresh raspberries and a bit of granulated sugar over medium heat. Cook until the raspberries start breaking down and form a thickened sauce. Allow to cool.
- Assemble the Dessert: Slice the puff pastry circles in half horizontally. On the bottom half, spread a layer of cream filling. Add a layer of raspberry filling on top of the cream. Place the top half of the pastry circle over the fillings.
- Garnish: Dust the top with powdered sugar using a sieve. Garnish with fresh raspberries and mint leaves if desired.
Notes
- Ensure the puff pastry is cold before baking to achieve maximum puffiness.
- For extra flavor, you can add lemon zest to the cream filling.
- The cream filling can be prepared in advance and stored in the fridge.
- Consider making the raspberry filling slightly tart to balance with the sweet cream and pastry. Adjust sugar levels as necessary based on the tartness of the raspberries.
