Description

A delicious and creamy zucchini noodle dish with parmesan cheese and garlic.


Ingredients

Scale
  • 2 medium zucchinis (spiralized)
  • 1 cup freshly grated parmesan cheese
  • 1 cup heavy cream
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 4 tbsp unsalted butter
  • 1 tsp Italian seasoning
  • 2 tbsp fresh lemon juice

Instructions

  1. Spiralize the zucchinis into noodles.
  2. In a skillet, heat olive oil over medium heat. Sauté zucchini noodles for 3-5 minutes until tender but still crisp. Remove and set aside.
  3. In another pan, melt butter and sauté garlic until fragrant. Add heavy cream and stir.
  4. Once simmering, mix in parmesan cheese until melted and smooth. Season with Italian seasoning, salt, pepper, and lemon juice.
  5. Fold in the sautéed zucchini noodles until well coated.
  6. Sprinkle additional parmesan on top and broil for 2-3 minutes until golden brown.

Notes

  • For extra flavor, add crushed red pepper flakes to the sauce.
  • Use fresh lemon juice for a brighter taste.
