  • 1 tbsp fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the Yukon Gold potatoes thoroughly; cut into uniform chunks.
  3. In a large bowl, combine potato chunks with minced garlic, olive oil, salt, pepper, and lemon juice. Toss until evenly coated.
  4. Spread the seasoned potatoes on a baking sheet in a single layer.
  5. Roast for 30-35 minutes until golden brown and crispy, shaking the pan halfway through.
  6. If using fresh herbs, add them during the last 10 minutes of roasting.
  7. Serve hot and enjoy!
