These delicious red bean sesame balls are a delightful treat made with glutinous rice flour, red bean paste, and coated in sesame seeds.

- 2 cups Glutinous Rice Flour
- 1 cup Water (hot)
- 1/4 cup Granulated Sugar
- 1 cup Red Bean Paste
- 1 cup White Sesame Seeds
- Oil for frying (neutral oil with a high smoke point)
Instructions
- Start by heating water and sugar in a small pan over medium heat. Stir until the sugar dissolves completely and the mixture reaches a boil.
- In a mixing bowl, combine glutinous rice flour and gradually pour in the hot water mixture while stirring. Knead the dough until it is smooth and elastic. Let it rest for about 30 minutes, covered with a damp cloth.
- After resting, divide the dough into equal small portions. Flatten each piece in your hand, then place a spoonful of red bean paste in the center. Pinch the edges to enclose the filling, rolling the dough into smooth balls.
- To get that perfect crunchy texture, dip each ball in a little water and roll it in white sesame seeds until fully coated.
- Heat oil in a wok until it reaches about 300°F. Carefully add the balls and fry for around 10 minutes. Next, increase the temperature to 350°F and fry for an additional 3-5 minutes until they turn golden brown.
