Description

This Taco Chicken Bake is a quick and easy one-pan meal packed with flavor and healthy ingredients.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups bell peppers, chopped (red, yellow, or green)
  • 1 packet (1 oz) taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar and Monterey Jack mix)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Grease a baking dish with nonstick spray.
  3. Place chicken breasts in the baking dish and sprinkle taco seasoning evenly over them.
  4. Scatter chopped bell peppers, black beans, and corn over the chicken.
