- 2 cups bell peppers, chopped (red, yellow, or green)
- 1 packet (1 oz) taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup salsa
- 1 cup shredded cheese (cheddar and Monterey Jack mix)
Instructions
- Preheat oven to 400°F (200°C).
- Grease a baking dish with nonstick spray.
- Place chicken breasts in the baking dish and sprinkle taco seasoning evenly over them.
- Scatter chopped bell peppers, black beans, and corn over the chicken.
- Pour salsa over the entire mixture for even coverage.
- Top with shredded cheese.
- Bake for 25-30 minutes until the chicken is cooked through and bubbly.
