- 1 cup whole milk
- 1 cup shredded sharp cheddar cheese

Instructions
- In a medium saucepan over medium heat, melt the butter.
- Whisk in the flour and cook for 1 minute, stirring constantly.
- Gradually pour in the milk while whisking continuously to avoid lumps.
- Continue stirring until the mixture thickens, about 3–4 minutes.
- Reduce heat to low and stir in both cheeses until melted and smooth.
- Season with salt, cayenne, and optional jalapeños. Stir to combine.
- Serve immediately or keep warm until ready to use.
