- 2 medium firm apples (like Honeycrisp or Granny Smith), sliced into wedges
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 tsp ground cinnamon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop onions and garlic; slice apples into wedges.
- Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper; sear for 5–7 minutes on each side until golden brown.
- Remove chicken from skillet. Sauté onions and garlic until fragrant; add apple wedges and cook briefly.
- Return chicken to the skillet, pour in broth, and sprinkle with cinnamon. Cover and simmer on low for about 20 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Plate alongside crusty bread or rice, garnish with fresh herbs if desired.
