Description
Deliciously stuffed chicken breasts filled with fresh mozzarella, cherry tomatoes, and basil.

- 4 boneless, skinless chicken breasts
- 1 cup fresh mozzarella, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh basil leaves, chopped
- 2 tbsp balsamic glaze
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Grease a baking dish with nonstick spray.
- In a bowl, mix chopped mozzarella, halved cherry tomatoes, basil, olive oil, salt, and pepper.
- Slice chicken breasts horizontally to create pockets without cutting all the way through.
- Generously fill each pocket with the mozzarella mixture.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear stuffed chicken for 3-4 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before drizzling balsamic glaze over each breast and serving.
Notes
- For best results, let the chicken rest after cooking to retain moisture.
- This dish pairs well with a side salad or steamed vegetables.
