Description

A delicious sandwich featuring sweet turkey sausage topped with sautéed peppers, onions, and melted mozzarella.


Ingredients

Scale
  • Cooking spray
  • ½ cup mix of sliced red peppers and red onion
  • ¼ cup banana peppers
  • 2 tablespoons pesto sauce
  • 1 large roll (sliced)
  • ¼ cup shredded mozzarella cheese
  • 1 Italian sausage (sweet turkey sausage)

Instructions

  1. Spray a pan with cooking spray and cook peppers and onions over medium heat until the red peppers and onions soften and the mixture starts to brown.
  2. While the pepper/onion mixture is cooking, start cooking your sausage. For the sausage to fit well on the roll, cut it in half and spread it out in a pan. This also helps reduce the cooking time. Brown the sausage until no more pink remains and it is fully cooked. While this is cooking, preheat a broiler.
  3. Spread the pesto sauce on both sides of the sliced bun.
  4. Top with the cooked sausage and pile on the banana peppers, red peppers and onions. Cover with ¼ cup of shredded mozzarella cheese and toast in a broiler or oven for 5-10 minutes until cheese melts and bread starts to brown.

Notes

  • For best results, use a sweet turkey sausage for a flavorful combination.
  • Adjust the amount of peppers and pesto according to taste.
