- Prepare the Potatoes: Preheat the oven to 400°F (200°C). Scrub the potatoes under running water and dry them thoroughly. Pierce each potato several times with a fork. Rub potatoes with olive oil and sprinkle with salt. Place potatoes directly on the oven rack and bake for 45-60 minutes or until tender.
- Cook the Steak: While the potatoes bake, season the diced steak with salt, pepper, and garlic powder. Heat a skillet over medium-high heat with a tablespoon of olive oil. Add the steak pieces and cook until browned on all sides and cooked to your preference (about 4-6 minutes). Remove steak from the skillet and set aside.
- Cook the Bacon: Cook bacon slices in a separate skillet or oven until crispy. Drain on paper towels and crumble into bits.
- Assemble the Loaded Potatoes: Once potatoes are done, remove from the oven. Slice each potato open lengthwise and fluff the inside with a fork, placing a tablespoon of butter inside each. Evenly distribute and mix in the steak, crumbled bacon, shredded cheddar cheese, and sour cream. Sprinkle chopped green onions on top for garnish.
- Final Steps: You may return the assembled potatoes to the oven for a few minutes to melt the cheese if desired.
