- 8 ounces feta cheese, crumbled

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C).
- Prepare Potatoes: Wash and halve the baby potatoes. In a large mixing bowl, toss the potatoes with olive oil, garlic powder, oregano, salt, and pepper until well coated.
- Roast Potatoes: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes or until golden brown and crispy, flipping halfway through.
- Add Feta: Remove the baking sheet from the oven and sprinkle crumbled feta cheese evenly over the potatoes. Return to the oven and bake for an additional 5-7 minutes or until the feta starts to melt and turn golden.
- Garnish and Serve: Remove from the oven, garnish with fresh thyme leaves and a sprinkle of lemon zest, if desired. Serve warm.
