Description

Delicious savory waffles made with sweet potato, perfect for breakfast or brunch.


Ingredients

  • 1 cup cooked sweet potato puree or mashed roasted sweet potato (from about 1 large sweet potato)
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 1 cup all-purpose flour
  • 1 teaspoon smoked paprika
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine kosher salt
  • 1/2 teaspoon fine ground pepper
  • 1/3 cup shredded sharp cheddar cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. In a mixing bowl add the cooked sweet potato puree or mashed roasted sweet potato, together with the buttermilk, eggs, and vegetable oil. Whisk by hand until smooth.
  2. In a small bowl, mix the all-purpose flour, smoked paprika, baking powder, baking soda, fine kosher salt, and fine ground pepper. Add the flour mixture to the bowl of the sweet potato mixture and whisk until combined.
  3. Fold in the shredded sharp cheddar cheese and grated parmesan cheese.
  4. Preheat your waffle maker and spray with a tiny bit of oil, if needed.
  5. Pour the usual amount of batter into your preheated waffle iron (for my mini waffle iron this is around 2 tablespoons) and cook until the waffles are golden brown and crispy outside, around 4-6 minutes.
  6. Enjoy your warm savory waffles with sliced avocado and a sprinkle of chili flakes.

  • These waffles can be served with a variety of toppings such as avocado, chili flakes, or your favorite syrup.
  • Leftover batter can be stored in the refrigerator for a day or two.
