Description

This comforting ham and potato soup is perfect for chilly days, packed with flavor and easy to make in your slow cooker.


Ingredients

Scale
  • 1 large carrot (peeled & chopped)
  • 2 sticks celery (chopped)
  • 1/2 medium onion (chopped)
  • 1 pound ham (cut into small pieces)
  • 2 pounds Russet potatoes (peeled & diced)
  • 3 cloves garlic (minced)
  • 1/2 teaspoon Italian seasoning
  • 4 cups chicken broth
  • 2 cups water
  • Salt & pepper (to taste)

Instructions

  1. Add all ingredients (except for salt & pepper) to your slow cooker.
  2. Cover, and cook this soup on low for 6-8 hours or high for 3-4 hours. I prefer the potatoes to be fall-apart tender.
  3. Using a potato masher, lightly mash some of the potatoes right in the slow cooker. I like a mix of potato pieces and a bit of mash.
  4. Season with salt & pepper as needed and serve immediately.

Notes

  • Feel free to add more vegetables or spices according to your preference.
  • This soup can be stored in the refrigerator for up to 3 days.
