Description
This comforting ham and potato soup is perfect for chilly days, packed with flavor and easy to make in your slow cooker.
Ingredients

- 1 large carrot (peeled & chopped)
- 2 sticks celery (chopped)
- 1/2 medium onion (chopped)
- 1 pound ham (cut into small pieces)
- 2 pounds Russet potatoes (peeled & diced)
- 3 cloves garlic (minced)
- 1/2 teaspoon Italian seasoning
- 4 cups chicken broth
- 2 cups water
- Salt & pepper (to taste)
Instructions
- Add all ingredients (except for salt & pepper) to your slow cooker.
- Cover, and cook this soup on low for 6-8 hours or high for 3-4 hours. I prefer the potatoes to be fall-apart tender.
- Using a potato masher, lightly mash some of the potatoes right in the slow cooker. I like a mix of potato pieces and a bit of mash.
- Season with salt & pepper as needed and serve immediately.
Notes
- Feel free to add more vegetables or spices according to your preference.
- This soup can be stored in the refrigerator for up to 3 days.
