- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 1 tablespoon granulated sugar
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup strawberry preserves
- 1/2 cup fresh strawberries, sliced
- Whipped cream for garnish
Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (163°C).
- Mix graham cracker crumbs, melted butter, and 1 tablespoon of sugar in a bowl.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Bake the crust for 10 minutes and then let it cool.
- Make the Filling:
- Beat the cream cheese in a large bowl until smooth.
- Add 1 cup of sugar and vanilla extract, beating until well combined.
- Add the eggs, one at a time, mixing on low speed until just blended.
- Gently fold in the sour cream.
- Bake the Cheesecake:
- Pour the cream cheese mixture over the cooled crust.
- Bake for 55-60 minutes or until the center is set but still slightly jiggly.
- Turn off the oven, opening the door slightly, and let the cheesecake cool in the oven for about 1 hour.
- Prepare the Strawberry Topping:
- In a small saucepan, heat the strawberry preserves over low heat until smooth.
- Remove from heat, and let it cool slightly before spreading evenly over the cheesecake.
- Arrange fresh strawberry slices on top of the preserve layer.
- Chill:
- Refrigerate the cheesecake for at least 4 hours or overnight before serving.
- Garnish:
- Before serving, pipe or dollop whipped cream around the edges of the cheesecake.
Notes
- Ensure all cream cheese is at room temperature to prevent lumps in the batter.
- Do not open the oven door during baking to ensure an even rise.
- For a perfect slice, use a knife dipped in hot water, wiping it clean after each cut.
- If the top cracks, it can be covered with the strawberry topping for a perfect look.
