Ingredients

  • 1/4 cup unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup strawberry preserves
  • 1/2 cup fresh strawberries, sliced
  • Whipped cream for garnish

Instructions

  1. Prepare the Crust:
  2. Preheat your oven to 325°F (163°C).
  3. Mix graham cracker crumbs, melted butter, and 1 tablespoon of sugar in a bowl.
  4. Press the mixture evenly into the bottom of a 9-inch springform pan.
  5. Bake the crust for 10 minutes and then let it cool.
  6. Make the Filling:
  7. Beat the cream cheese in a large bowl until smooth.
  8. Add 1 cup of sugar and vanilla extract, beating until well combined.
  9. Add the eggs, one at a time, mixing on low speed until just blended.
  10. Gently fold in the sour cream.
  11. Bake the Cheesecake:
  12. Pour the cream cheese mixture over the cooled crust.
  13. Bake for 55-60 minutes or until the center is set but still slightly jiggly.
  14. Turn off the oven, opening the door slightly, and let the cheesecake cool in the oven for about 1 hour.
  15. Prepare the Strawberry Topping:
  16. In a small saucepan, heat the strawberry preserves over low heat until smooth.
  17. Remove from heat, and let it cool slightly before spreading evenly over the cheesecake.
  18. Arrange fresh strawberry slices on top of the preserve layer.
  19. Chill:
  20. Refrigerate the cheesecake for at least 4 hours or overnight before serving.
  21. Garnish:
  22. Before serving, pipe or dollop whipped cream around the edges of the cheesecake.
