A delicious and unique take on sushi served in crispy wonton cups.
Ingredients

- 1 cup sushi rice
- 1 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 0 teaspoon salt
- 0 pound cooked shrimp, chopped
- 0 cup mayonnaise
- 1 tablespoon sriracha (optional)
- 12 pieces wonton wrappers
- 1 whole avocado, sliced
- 1 whole cucumber, julienned
- soy sauce for serving
- sesame seeds for garnish
- chopped green onions for garnish
Instructions
- Rinse sushi rice under cold water until the water runs clear. Combine the washed rice with 1 1/4 cups of water in a saucepan, bring to a boil, then reduce heat. Cover and simmer for 18-20 minutes. Let sit, covered, for an additional 10 minutes.
- In a bowl, combine 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1/2 teaspoon of salt; stir until dissolved. Gently fold this mixture into the cooled sushi rice for added flavor.
- Preheat your oven to 375°F. Lightly spray a muffin tin with cooking spray, then shape 12 wonton wrappers into cones. Bake them for 8-10 minutes until they turn golden and crispy. Allow to cool completely before filling.
- In a medium bowl, mix together the chopped shrimp with 1/4 cup of mayonnaise and 1 tablespoon of sriracha, if using. Stir well to combine, creating a creamy filling.
- Take each cooled wonton cone and fill it first with a spoonful of sushi rice, then layer in the shrimp mixture, followed by slices of avocado and some julienned cucumber. Garnish with sesame seeds and chopped green onions. Serve with soy sauce on the side for dipping.
Notes
- For best results, rinse sushi rice well before cooking.
- You can substitute cooked shrimp with diced tofu for a vegetarian option.
- Adjust the level of sriracha based on your heat preference.
- Consider using carrots in place of cucumber for a different flavor profile.
- Teriyaki sauce can be a nice alternative for dipping.
