- 2 tbsp melted coconut oil, divided
- 4 cups brussels sprouts, halved or quartered if large
- 3 large carrots, cut into batons
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp ground coriander
- 1/3 tsp salt
- 1/3 tsp black pepper
- 1 tbsp maple syrup
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine melted coconut oil, brussels sprouts, carrots, smoked paprika, garlic powder, ground coriander, salt, and black pepper. Mix well to coat.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for about 20-25 minutes, stirring halfway, until tender and golden.
- Drizzle with maple syrup before serving.
Notes
- For extra sweetness, you can increase the amount of maple syrup.
- This dish pairs well with grilled chicken or fish.
