Description

Ingredients

  • 2 tbsp melted coconut oil, divided
  • 4 cups brussels sprouts, halved or quartered if large
  • 3 large carrots, cut into batons
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground coriander
  • 1/3 tsp salt
  • 1/3 tsp black pepper
  • 1 tbsp maple syrup

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine melted coconut oil, brussels sprouts, carrots, smoked paprika, garlic powder, ground coriander, salt, and black pepper. Mix well to coat.
  3. Spread the mixture on a baking sheet in a single layer.
  4. Roast in the preheated oven for about 20-25 minutes, stirring halfway, until tender and golden.
  5. Drizzle with maple syrup before serving.

  • For extra sweetness, you can increase the amount of maple syrup.
