Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another bowl, cream the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, lemon zest, and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, until the batter is smooth and homogeneous.
- Pour the batter into the prepared cake pan, spreading it evenly.
- Place the cake in the preheated oven and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and allow it to cool in the pan for about 20 minutes before transferring it to a wire rack.
- If making homemade custard, prepare it now according to your preferred recipe and let it cool slightly.
- Once the cake has cooled completely, slice it horizontally to create two layers.
- Spread a layer of lemon custard on the bottom layer and then place the second layer on top.
- Refrigerate the cake for at least an hour to let the flavors meld.
- Before serving, dust the top with powdered sugar for an elegant presentation.
