A delicious lemon blueberry loaf that is perfect for breakfast or as a snack.
Ingredients

- 1 ½ cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup whole milk
- ⅓ cup vegetable oil
- Zest and juice of 2 fresh lemons
- 1 cup fresh or frozen blueberries
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, combine eggs, milk, vegetable oil, lemon zest, and lemon juice until smooth.
- Pour the wet mixture into the dry ingredients and gently fold until just combined. Add blueberries carefully.
- Transfer the batter to the prepared loaf pan and bake for 55-60 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- This loaf is best served fresh but can be stored in an airtight container for up to 3 days.
- For a sweeter loaf, you can add more sugar according to your taste.
