Description

A delicious lemon blueberry loaf that is perfect for breakfast or as a snack.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup granulated sugar
  • 2 large eggs
  • ½ cup whole milk
  • ⅓ cup vegetable oil
  • Zest and juice of 2 fresh lemons
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. In another bowl, combine eggs, milk, vegetable oil, lemon zest, and lemon juice until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined. Add blueberries carefully.
  5. Transfer the batter to the prepared loaf pan and bake for 55-60 minutes or until golden brown and a toothpick comes out clean.
  6. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • This loaf is best served fresh but can be stored in an airtight container for up to 3 days.
  • For a sweeter loaf, you can add more sugar according to your taste.
