- 1 cup (230g) unsalted butter, softened
- 3/4 cup (150g) brown sugar, packed
- 1/2 cup (100g) white sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups (295g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups mini Cadbury eggs, roughly chopped
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, beat together the butter, brown sugar, and white sugar until light and fluffy.
- Crack in the eggs one at a time, mixing well and adding vanilla.
- In another bowl, whisk together flour, baking soda, and salt, then mix into the wet ingredients until just combined.
- Fold in chopped Cadbury eggs and chocolate chips.
- Use a spoon to scoop blobs of dough onto prepared sheets, spaced about 2 inches apart.
- Bake for 10–12 minutes until the edges are lightly browned and the middles look puffy.
- Let cookies cool on the tray for 5 minutes before transferring to a wire rack.
- Enjoy warm or let cool completely.
Notes
- For smaller eggs, add a tablespoon of milk to the eggs.
- Using half whole-wheat flour may result in a drier texture.
- Place extra mini eggs on top for a decorative touch.
