Description

Soft and chewy cookies loaded with mini Cadbury eggs and chocolate chips, perfect for any occasion.


Ingredients

  • 1 cup (230g) unsalted butter, softened
  • 3/4 cup (150g) brown sugar, packed
  • 1/2 cup (100g) white sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups (295g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups mini Cadbury eggs, roughly chopped
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat together the butter, brown sugar, and white sugar until light and fluffy.
  3. Crack in the eggs one at a time, mixing well and adding vanilla.
  4. In another bowl, whisk together flour, baking soda, and salt, then mix into the wet ingredients until just combined.
  5. Fold in chopped Cadbury eggs and chocolate chips.
  6. Use a spoon to scoop blobs of dough onto prepared sheets, spaced about 2 inches apart.
  7. Bake for 10–12 minutes until the edges are lightly browned and the middles look puffy.
  8. Let cookies cool on the tray for 5 minutes before transferring to a wire rack.
  9. Enjoy warm or let cool completely.

Notes

  • For smaller eggs, add a tablespoon of milk to the eggs.
  • Using half whole-wheat flour may result in a drier texture.
