- 1 cup uncooked long-grain rice

Instructions
- Start by preheating your oven to 375°F and lightly greasing a large baking dish. The smell of this casserole baking later is one of those kitchen moments that instantly makes a house feel warm and welcoming.
- In a large mixing bowl, combine the uncooked rice, chicken broth, salsa, diced tomatoes, chili powder, cumin, garlic powder, onion powder, salt, and pepper. Stir everything together so the rice is evenly coated with the flavorful mixture.
- Next, fold in the shredded chicken, black beans, corn, and lime juice. The mixture will look a little soupy at this stage, but that’s exactly what you want. As the casserole bakes, the rice will absorb the liquid and soak up all those delicious spices.
- Pour the mixture into the prepared baking dish and spread it evenly. Cover the dish tightly with foil and place it in the oven. Let it bake for about 40 minutes so the rice cooks through and the flavors start to meld together.
