Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a large bowl, using an electric mixer, cream the butter and sugar together until light and fluffy.
- Add Wet Ingredients: Beat in the eggs one at a time. Mix in the coconut milk, lime zest, lime juice, and vanilla extract until well combined.
- Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
- Add Coconut: Fold in the shredded coconut.
- Bake: Pour the batter into the prepared Bundt pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Allow the cake to cool in the pan for 15 minutes, then invert onto a cooling rack.
- Prepare Icing: In a small bowl, whisk together confectioners’ sugar and lime juice until smooth.
- Decorate: Drizzle the icing over the cooled cake. Garnish with lime slices and fresh cranberries.
