- 2 cups whole milk

- 3 large eggs, separated

Instructions
- In a medium saucepan over medium heat, combine the milk and cornmeal. Whisk constantly until the mixture thickens and becomes smooth.
- Remove the saucepan from heat and stir in the butter until melted. Let it cool slightly.
- Whisk in the egg yolks, baking powder, and salt until well combined.
- In a separate bowl, beat egg whites until soft peaks form using a hand mixer or stand mixer.
- Gently fold the egg whites into the cornmeal mixture in batches, maintaining as much air as possible.
- Pour the batter into a well-buttered 9×9-inch baking dish and smooth the top.
- Bake at 375°F (190°C) for 35 minutes, or until golden brown and puffed.
- Serve warm with your choice of savory or sweet toppings.
