Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or cooking spray so the pudding releases easily after baking.
- Add the cornmeal, all-purpose flour, granulated sugar, baking powder, and salt to a large mixing bowl. Stir the ingredients together until evenly combined and free of lumps.
- Place the eggs, milk, melted butter, and sour cream in a separate bowl. Whisk until the mixture becomes smooth and creamy with a uniform texture.
- Stir the drained whole kernel corn and creamed corn into the wet mixture. Mix gently so the corn distributes evenly throughout the batter.
- Gradually add the dry ingredient mixture to the bowl of wet ingredients. Stir slowly until the batter is just combined and smooth. Avoid excessive mixing to keep the pudding soft.
- Fold in shredded cheddar cheese, chopped green onions, and black pepper if using. Mix gently to distribute the ingredients evenly.
- Pour the batter into the prepared baking dish. Use a spatula to spread the mixture evenly and smooth the surface.
- Place the baking dish in the preheated oven and bake for 40 to 45 minutes. The pudding is ready when the edges turn golden brown and the center is set but still moist.
- Remove the dish from the oven and allow the pudding to rest for about 10 minutes. Slice into portions and serve warm.
