- 1 cup unsalted butter, room temperature
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups mini marshmallows
- 2 cups Rice Krispies cereal
Instructions
- Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Fold in mini marshmallows and Rice Krispies cereal gently with a spatula.
- Chill the dough for 30 minutes to 1 hour (optional, but recommended).
- Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
- Scoop 2-tablespoon-sized dough balls and place a few inches apart on the sheet.
- Bake for 10–12 minutes, until edges are golden and centers are set.
- Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Chilling the dough helps improve the texture of the cookies.
- Store cookies in an airtight container for up to a week.
