Instructions
- Prepare the Crust: Preheat the oven to 325°F (163°C). Crush the chocolate sandwich cookies into fine crumbs using a food processor. Mix the cookie crumbs with melted butter until evenly moistened. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and set aside to cool.
- Make the Cheesecake Filling: In a large bowl, beat the cream cheese until smooth. Add the sugar and vanilla extract, mixing until well combined. Add the eggs one at a time, beating on low speed until just incorporated. Pour the cheesecake mixture over the cooled crust.
- Bake: Bake the cheesecake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour. Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
- Prepare the Chocolate Topping: In a medium saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chocolate chips, stirring until smooth and fully melted. Let the chocolate mixture cool slightly before pouring over the chilled cheesecake.
- Add Caramel Drizzle: Drizzle the caramel sauce over the chocolate topping.
- Garnish and Serve: Top with whipped cream and additional chocolate cookies. Slice and serve chilled.
