Description

This creamy rotini pasta salad combines fresh vegetables and a tangy dressing for a refreshing dish perfect for any occasion.


Ingredients

  • 12 ounces rotini pasta
  • 3/4 cup mayonnaise
  • 1/2 cup sour cream
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 garlic clove, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil and cook the rotini until al dente.
  2. Drain the pasta, rinse it under cold water, and let it cool completely.
  3. In a large mixing bowl, whisk together the mayonnaise, sour cream, lemon juice, lemon zest, garlic, Parmesan, salt, and black pepper until smooth.
  4. Add the cooled pasta, cucumber, cherry tomatoes, red onion, dill, and parsley to the bowl.
  5. Toss everything gently until the pasta is evenly coated in the creamy lemon dressing.
  6. Cover and chill for at least 30 minutes before serving, then stir and serve cold.
