Description

Indulge in this rich and moist chocolate cake layered with creamy peanut butter frosting, topped with chocolate truffles for an elegant finish.

Ingredients

Scale
  • 2 cups granulated sugar
  • 1 ¾ cups all-purpose flour
  • ¾ cup cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup creamy peanut butter
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract
  • chocolate truffles (for garnish)

Instructions

  1. Prepare the Oven: Preheat your oven to 350°F (175°C) and grease and flour a Bundt cake pan.
  2. Make the Cake Batter: In a large bowl, combine the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes. Stir in the boiling water (batter will be thin).
  3. Bake the Cake: Pour the batter into the prepared Bundt pan. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes before removing from the pan to cool completely.
  4. Prepare the Peanut Butter Frosting: In a medium bowl, beat together peanut butter and butter until creamy. Gradually add powdered sugar, beating until smooth. Add the heavy cream and vanilla extract, beating until well combined.
  5. Assemble the Cake: Once the cake has cooled, slice it horizontally into two layers. Spread a generous layer of peanut butter frosting on the bottom layer. Place the top layer back on and frost the top and sides of the cake. Use a piping bag to decorate with additional swirls of frosting on top.
  6. Garnish: Top with chocolate truffles or decorative pieces for an elegant finish.

Notes

  • Ensure all ingredients are at room temperature before beginning for a smoother batter.
  • You can substitute boiling water with coffee for an enhanced chocolate flavor.
  • Chill the cake for about 30 minutes before slicing to ensure neat servings.
  • Feel free to add a pinch of sea salt on top of the frosting for a delightful contrast.
