Ingredients
Scale
- 2 cups granulated sugar
- 1 ¾ cups all-purpose flour
- ¾ cup cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup creamy peanut butter
- ½ cup unsalted butter (softened)
- 2 cups powdered sugar
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
- chocolate truffles (for garnish)
Instructions
- Prepare the Oven: Preheat your oven to 350°F (175°C) and grease and flour a Bundt cake pan.
- Make the Cake Batter: In a large bowl, combine the sugar, flour, cocoa, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla extract. Beat on medium speed for 2 minutes. Stir in the boiling water (batter will be thin).
- Bake the Cake: Pour the batter into the prepared Bundt pan. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes before removing from the pan to cool completely.
- Prepare the Peanut Butter Frosting: In a medium bowl, beat together peanut butter and butter until creamy. Gradually add powdered sugar, beating until smooth. Add the heavy cream and vanilla extract, beating until well combined.
- Assemble the Cake: Once the cake has cooled, slice it horizontally into two layers. Spread a generous layer of peanut butter frosting on the bottom layer. Place the top layer back on and frost the top and sides of the cake. Use a piping bag to decorate with additional swirls of frosting on top.
- Garnish: Top with chocolate truffles or decorative pieces for an elegant finish.
Notes
- Ensure all ingredients are at room temperature before beginning for a smoother batter.
- You can substitute boiling water with coffee for an enhanced chocolate flavor.
- Chill the cake for about 30 minutes before slicing to ensure neat servings.
- Feel free to add a pinch of sea salt on top of the frosting for a delightful contrast.
