Description

A rich and indulgent chocolate cake layered with fresh strawberries and topped with smooth chocolate ganache.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 8 oz dark chocolate, chopped
  • 1 cup fresh strawberries, sliced
  • Chocolate shavings for garnish

Instructions

  1. Prepare the Cake Batter:

    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add eggs, milk, oil, and vanilla to the flour mixture. Beat on medium speed for 2 minutes.
    • Stir in boiling water (the batter will be thin).
  2. Bake the Cakes:

    • Pour the batter evenly into the prepared cake pans.
    • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
    • Allow cakes to cool for 10 minutes in the pans, then remove from pans to finish cooling on a wire rack.
  3. Prepare the Chocolate Ganache:

    • Heat the heavy cream in a saucepan until it begins to simmer.
    • Pour over chopped dark chocolate. Let it sit for 2 minutes, then stir until smooth.
    • Allow the ganache to cool until it thickens slightly.
  4. Assemble the Cake:

    • Place one cake layer on a serving plate. Spread a layer of ganache over it.
    • Add a layer of sliced strawberries.
    • Place the second cake layer on top.
    • Pour the remaining ganache over the top, allowing it to drip down the sides.
  5. Garnish:

    • Decorate with more sliced strawberries and sprinkle with chocolate shavings.

Notes

  • For more strawberry flavor, add a layer of strawberry preserves between the cake layers.
  • Ensure the cake is completely cool before adding the ganache to prevent it from melting off.
  • Store the cake in the fridge for up to 3 days for freshness.
  • Use a serrated knife for clean cake slices.
