- Make the Dough: In a large bowl, dissolve yeast in the warm milk and let it sit for 5 minutes until it becomes frothy. Add sugar, melted butter, eggs, and red food coloring to the milk mixture. In another bowl, mix flour, salt, and cocoa powder. Gradually add this to the wet ingredients. Knead the mixture into a soft dough. Cover and let it rise in a warm place for about 1 hour or until doubled in size.
- Prepare the Filling: In a small bowl, mix the softened butter, brown sugar, and cinnamon until smooth.
- Assemble the Rolls: Roll out the dough on a floured surface into a large rectangle (about 16×12 inches). Spread the cinnamon filling evenly over the dough. Roll the dough tightly into a log starting from the longer side. Cut into 12 even pieces and place them in a greased baking dish.
- Bake the Rolls: Preheat the oven to 350°F (175°C). Let the rolls rise for another 20-30 minutes. Bake for 20-25 minutes or until they are golden brown.
- Make the Frosting: Beat the cream cheese and butter together until smooth. Add powdered sugar, vanilla extract, and salt. Mix until creamy.
- Finish: Spread the cream cheese frosting over warm rolls.
