Description

Delicious vegan taquitos filled with black beans, corn, and spices, perfect for a quick snack or meal.


Ingredients

  • 1 cup (200g) cooked black beans
  • 1/2 cup (100g) corn kernels
  • 1/4 cup (50g) diced bell peppers
  • 1/4 cup (50g) diced onions
  • 1 teaspoon (5g) chili powder
  • 1/2 teaspoon (2g) cumin
  • 1/2 teaspoon (2g) garlic powder
  • 8 small corn tortillas
  • 1 tablespoon (15ml) vegetable oil

Instructions

  1. In a bowl, mash the black beans slightly and mix with corn, bell peppers, onions, chili powder, cumin, and garlic powder.
  2. Warm the corn tortillas briefly to make them pliable.
  3. Place about 2 tablespoons of the filling in the center of each tortilla and roll tightly into a taquito.
  4. Heat vegetable oil in a skillet over medium heat.
  5. Cook the taquitos for 2-3 minutes per side until golden and crispy.
  6. Serve immediately with your favorite vegan toppings like salsa or guacamole.
