- 1 cup fresh vegetables (such as carrots and spinach)
- 2 cloves garlic (minced)
- 1 tbsp herbs (such as parsley or thyme)

Instructions
- In a large pot, heat olive oil over medium heat for about 1-2 minutes until shimmering.
- Add minced garlic to the hot oil and sauté for about 1 minute until fragrant.
- Introduce chopped carrot and fresh vegetables to the pot; sauté for 5-7 minutes until tender.
- Pour in vegetable broth, stirring to combine, and bring to a gentle simmer for 3-5 minutes.
- Gently add frozen ravioli into the simmering broth and cook for 5-7 minutes until they float.
- Once ravioli float, sprinkle in salt, pepper, and fresh herbs; stir well and let cook for an additional minute.
- Ladle the soup into bowls and garnish with extra herbs if desired.
Notes
- This soup can be customized with any vegetables you have on hand.
- For extra flavor, consider adding grated Parmesan cheese when serving.
