- 1 (15 oz) can diced tomatoes with green chilies
- 1 (15 oz) can corn, drained
- 1 (15 oz) can black beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 2 cups tortilla chips
Instructions
- Gather all ingredients on a clean surface.
- Open and drain the canned chicken, tomatoes, corn, and black beans; no need to drain the tomatoes.
- In a large pot over medium heat, combine the canned chicken, tomatoes, corn, black beans, and chicken broth. Stir well.
- Season with cumin and chili powder to taste. Let simmer for about 10 minutes.
- Taste the soup and adjust seasoning as necessary.
- Serve hot in bowls topped with tortilla chips and any additional garnishes.
