  • 1 cup green beans, trimmed and cut
  • 1 (14 oz) can diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas
  • 2 cups chopped fresh spinach
  • Fresh parsley for garnish

Instructions

  1. Build the Flavor Base: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until soft and translucent, about 4–5 minutes. Stir in the garlic and let it cook for about 30 seconds until fragrant.
  2. Add the Hearty Vegetables: Stir in the carrots and celery. Let them cook for about 5 minutes, softening slightly.
  3. Pour and Season: Add the zucchini, green beans, diced tomatoes (with their juices), vegetable broth, thyme, oregano, bay leaf, salt, and pepper. Stir well. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for 20–25 minutes.
  4. Finish with Tender Greens: Stir in the frozen peas and chopped spinach. Let the soup cook for another 5 minutes until the greens are wilted and vibrant. Remove the bay leaf.
  5. Taste and Serve: Taste and adjust seasoning if needed. Ladle into bowls and sprinkle with fresh parsley. Serve warm with crusty bread for the ultimate cozy meal.
