- 4 boneless, skinless chicken breasts (about 1 lbs)
- 4 cloves fresh garlic, minced
- 28 oz canned diced tomatoes
- 2 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- 1/4 cup fresh basil leaves
Instructions
- Pat the chicken breasts dry and season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Sauté minced garlic until fragrant (about 30 seconds).
- Add the chicken breasts to the skillet; cook for 5-6 minutes per side until golden brown.
- Pour in the canned diced tomatoes and Italian seasoning; stir to combine.
- Reduce heat to low, cover, and simmer for 15-20 minutes until chicken reaches an internal temperature of 165°F.
- Stir in fresh basil before serving. Plate with pasta or crusty bread.
