- 1 lb boneless, skinless chicken breasts
- 8 oz fresh cremini or button mushrooms, sliced
- 1 cup asiago cheese, shredded
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- Fresh thyme or parsley, for garnish
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear the chicken until golden brown on both sides (5-7 minutes per side). Remove and set aside.
- In the same skillet, add minced garlic and sliced mushrooms; sauté until mushrooms are golden (about 5 minutes).
- Pour in heavy cream and chicken broth, scraping up any browned bits from the pan. Let simmer gently for 3-4 minutes to thicken slightly.
- Gradually stir in shredded asiago cheese until melted and creamy.
- Return the chicken to the skillet along with any accumulated juices. Spoon sauce over each piece and simmer for another 5 minutes.
- Garnish with freshly chopped herbs before serving.
