  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup asiago cheese, shredded
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Fresh thyme or parsley, for garnish
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear the chicken until golden brown on both sides (5-7 minutes per side). Remove and set aside.
  2. In the same skillet, add minced garlic and sliced mushrooms; sauté until mushrooms are golden (about 5 minutes).
  3. Pour in heavy cream and chicken broth, scraping up any browned bits from the pan. Let simmer gently for 3-4 minutes to thicken slightly.
  4. Gradually stir in shredded asiago cheese until melted and creamy.
  5. Return the chicken to the skillet along with any accumulated juices. Spoon sauce over each piece and simmer for another 5 minutes.
  6. Garnish with freshly chopped herbs before serving.
