A delicious stir-fried dish featuring flat rice noodles, your choice of protein, and fresh vegetables.
Ingredients

- 8 oz flat rice noodles
- 1 cup cooked protein (chicken, shrimp, or tofu)
- 1 cup fresh bell peppers (sliced)
- 1 cup bean sprouts
- 2 large eggs
- 2 tbsp lime juice (freshly squeezed)
- 2 tbsp tamarind paste
- 3 tbsp low-sodium soy sauce
- 2 tbsp brown sugar (dark brown preferred)
- 1 tsp chili powder (adjust to taste)
Instructions
- Soak the rice noodles in warm water for about 30 minutes until softened but still firm. Drain well.
- In a large skillet or wok over medium heat, add oil and cook your chosen protein for about 5-7 minutes until fully cooked.
- Add sliced bell peppers and cook for another 3-4 minutes.
- Push ingredients to one side of the pan; crack in eggs and scramble until just set.
- Combine drained noodles with tamarind paste, soy sauce, brown sugar, and chili powder. Toss until well-coated.
- Garnish with fresh bean sprouts and lime wedges before serving.
Notes
- Feel free to adjust the chili powder based on your heat preference.
- Use any protein of your choice or keep it vegetarian with just tofu.
