- 2 cups sweetened shredded coconut
- 1 cup sugar
- 4 large eggs
- 1/2 cup butter, melted
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 pinch of salt
Instructions
- In a large bowl, stir together the sweetened shredded coconut, sugar, eggs, melted butter, flour, vanilla extract, baking powder, and a pinch of salt until you have a smooth batter.
- Preheat your oven to 350°F.
- Grease a muffin tin or cake pan and divide the batter evenly, filling each cup about two-thirds full.
- Place the pan in the oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Remove the cakes from the oven and let them cool in the pan for about 10 minutes.
- Then transfer to a wire rack to cool completely.
- Arrange your Portuguese Coconut Cakes on a platter. Enjoy them warm or at room temperature with a cup of coffee or tea!

- You can substitute the sugar with brown sugar for a richer taste.
- For a vegan option, use flax eggs instead of regular eggs.
