Instructions
- Scoop 1 cup of full-fat cottage cheese into a food processor and blend on high speed for about 30 seconds until smooth and creamy.
- Add 1/3 cup of no-sugar-added natural peanut butter, your chosen sweetener, and 5 drops of liquid stevia vanilla to the blended cottage cheese. Blend for another 30 seconds until velvety.
- For an optional berry sauce, blend 1/2 cup of frozen berries with sweetener until pureed or simmer berries in a saucepan until thick.
- Spoon the whipped mixture into serving bowls and drizzle berry sauce over the top if made.
