  • 12 ripe mangoes, diced
  • Whipped cream

Instructions

  1. Make the Crepe Batter: In a large mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs and then add the milk, melted butter, sugar, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Let the batter rest for at least 30 minutes in the refrigerator.
  2. Prepare the Filling: In a medium bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined. Set aside.
  3. Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease with butter or oil. Pour about 1/4 cup of batter into the pan, swirling to coat the bottom evenly. Cook for 1-2 minutes or until the edges start to lift and the bottom is lightly golden. Flip and cook the other side for an additional 1 minute. Repeat with remaining batter, stacking crepes with parchment paper in between.
  4. Assemble the Crepes: Spread a layer of the cream cheese filling over one side of the crepe. Roll the crepe and place it seam side down on a plate. Repeat with remaining crepes.
  5. Add Toppings: Top each rolled crepe with whipped cream and diced mangoes. Sprinkle shredded coconut over the top if desired.
