Description

This one-pot chicken and orzo recipe is a delightful and hearty dish that combines tender chicken, flavorful orzo, and vibrant broccoli, all cooked together for a delicious meal.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breast, diced into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups broccoli florets, fresh or frozen
  • 4 cups low-sodium chicken broth
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • to taste salt and pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  2. Once the chicken is cooked, add the diced onion and minced garlic to the pot. Sauté for an additional 2-3 minutes until the onion is translucent.
  3. Pour in the chicken broth and stir in the orzo. Bring it to a simmer, then cover the pot and let it cook for about 10 minutes, stirring occasionally.
  4. Add the broccoli florets into the pot and continue to simmer for an additional 3-5 minutes, or until the orzo is tender and the broccoli is bright green.
  5. Reduce the heat to low and add the shredded cheese. Stir until the cheese is melted and creamy.
  6. Remove from heat and serve warm. Enjoy the delicious flavors of this one-pot wonder!
