- 1 pound boneless, skinless chicken breast, diced into bite-sized pieces
- 1 cup orzo pasta
- 2 cups broccoli florets, fresh or frozen
- 4 cups low-sodium chicken broth
- 1 cup shredded cheese (cheddar or a blend)
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil

Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
