Ingredients

- 2 cups fresh pineapple chunks (ripe and juicy)
- 10 fresh mint leaves (bright and fragrant)
- 1 lime (lime juice, freshly squeezed)
- 2 tablespoons honey (or maple syrup for a vegan option)
Instructions
- Place the pineapple chunks in a blender and puree until smooth and vibrant yellow, with a slightly thick consistency.
- Add the mint leaves, lime juice, and honey to the blender. Pulse a few times just to incorporate the mint evenly without over-blending, keeping small flecks visible for texture and visual appeal.
- Pour the mixture into popsicle molds, filling each almost to the top, leaving a small space for expansion as they freeze.
- Insert sticks into the molds carefully, ensuring they stand upright and are centered.
- Place the molds in the freezer and chill for at least 4 hours, or preferably overnight, until the popsicles are completely frozen and firm.
- To unmold, run warm water over the outside of each mold for a few seconds to loosen the popsicles.
- Gently pull on the sticks to release the popsicles, then enjoy immediately or store in an airtight container in the freezer for later.
