Ingredients

  • 2 cups fresh pineapple chunks (ripe and juicy)
  • 10 fresh mint leaves (bright and fragrant)
  • 1 lime (lime juice, freshly squeezed)
  • 2 tablespoons honey (or maple syrup for a vegan option)

Instructions

  1. Place the pineapple chunks in a blender and puree until smooth and vibrant yellow, with a slightly thick consistency.
  2. Add the mint leaves, lime juice, and honey to the blender. Pulse a few times just to incorporate the mint evenly without over-blending, keeping small flecks visible for texture and visual appeal.
  3. Pour the mixture into popsicle molds, filling each almost to the top, leaving a small space for expansion as they freeze.
  4. Insert sticks into the molds carefully, ensuring they stand upright and are centered.
  5. Place the molds in the freezer and chill for at least 4 hours, or preferably overnight, until the popsicles are completely frozen and firm.
  6. To unmold, run warm water over the outside of each mold for a few seconds to loosen the popsicles.
  7. Gently pull on the sticks to release the popsicles, then enjoy immediately or store in an airtight container in the freezer for later.
