Description

A hearty and flavorful dish of red beans and rice.


Ingredients

Scale
  • 1 cup long-grain white rice
  • 1 tsp olive oil
  • 12 oz andouille sausage, sliced
  • ¼ cup sweet onion, diced
  • ½ cup green bell pepper, diced
  • 1 cup celery, diced
  • ½ Tbsp minced garlic
  • 2 Tbsp tomato paste
  • 1 ½ tsp Cajun seasoning
  • 45 oz canned red beans, drained
  • 3 cups chicken broth
  • 1 bay leaf
  • salt & pepper to taste
  • 2 Tbsp green onion, sliced (optional, for garnish)

Instructions

  1. Cook the 1 cup long-grain white rice according to package instructions and set aside.
  2. Heat 1 tsp olive oil in a large stockpot or Dutch oven over medium heat. Brown the sliced 12 oz andouille sausage for 3-4 minutes, then remove and set aside.
  3. Add ¼ cup sweet onion, ½ cup green bell pepper, and 1 cup celery to the pot. Sauté until tender (3-4 minutes). Stir in ½ Tbsp minced garlic, 2 Tbsp tomato paste, and 1 ½ tsp Cajun seasoning; cook for 1 minute until fragrant.
  4. Add the 45 oz canned red beans, 3 cups chicken broth, 1 bay leaf, and browned sausage. Bring to a boil, then reduce heat to low.
  5. Simmer covered for 15 minutes. Uncover and simmer for another 15 minutes (or until the liquid has reduced and thickened).
  6. Taste and adjust each, salt & pepper. Serve the red beans over the cooked rice and garnish with 2 Tbsp green onion.

Notes

  • The rice will amount to approximately 3 cups cooked.
  • For a vegetarian option, substitute andouille sausage with a plant-based alternative.
