Description

A deliciously moist walnut caramel cake topped with smooth caramel cream and whole walnuts.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3/4 cup unsalted butter, softened
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup heavy cream
  • 1/2 cup caramel sauce (store-bought or homemade)
  • Whole walnuts for decoration

Instructions

  1. Prepare the Cake Batter:
    • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
    • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
    • In a separate bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract.
    • Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
    • Fold in the chopped walnuts.
  2. Bake the Cakes:
    • Divide the batter evenly between the prepared cake pans.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cakes cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on wire racks.
  3. Prepare the Frosting:
    • In a mixing bowl, whip the heavy cream until soft peaks form.
    • Gently fold in the caramel sauce until combined, creating a smooth frosting.
  4. Assemble the Cake:
    • Place one cake layer on a serving plate.
    • Spread half of the caramel cream over the first layer.
    • Top with the second cake layer.
    • Spread the remaining caramel cream over the top and sides of the cake.
    • Drizzle additional caramel sauce over the top for decoration and sprinkle with whole walnuts.

Notes

  • For a deeper caramel flavor, you can toast the walnuts before folding them into the batter.
