Description
A deliciously moist walnut caramel cake topped with smooth caramel cream and whole walnuts.

- 1 3/4 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 3/4 cup unsalted butter, softened
- 4 large eggs
- 1/2 cup whole milk
- 1 teaspoon vanilla extract

- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup chopped walnuts
- 1 cup heavy cream
- 1/2 cup caramel sauce (store-bought or homemade)
- Whole walnuts for decoration
Instructions
- Prepare the Cake Batter:
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with milk, beginning and ending with dry ingredients. Mix until just combined.
- Fold in the chopped walnuts.
- Bake the Cakes:
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on wire racks.
- Prepare the Frosting:
- In a mixing bowl, whip the heavy cream until soft peaks form.
- Gently fold in the caramel sauce until combined, creating a smooth frosting.
- Assemble the Cake:
- Place one cake layer on a serving plate.
- Spread half of the caramel cream over the first layer.
- Top with the second cake layer.
- Spread the remaining caramel cream over the top and sides of the cake.
- Drizzle additional caramel sauce over the top for decoration and sprinkle with whole walnuts.
Notes
- For a deeper caramel flavor, you can toast the walnuts before folding them into the batter.
- Make sure the cakes are completely cool before frosting to prevent the frosting from melting.
- Store the cake in the refrigerator and allow it to come to room temperature before serving for the best texture.
