Description

A delicious combination of spinach, fenugreek, and paneer cooked with aromatic spices.


Ingredients

  • 2 cups Spinach/ Palak
  • 1 cup Fenugreek/ Methi
  • 1 cup Radish Greens/ Mooli ke Patte
  • 1/2 cup Fresh Coriander/ Dhaniya
  • 2 Green Chillies
  • 4 tbsp Mustard Oil
  • 400 g Paneer (Cut into cubes)
  • 34 Cloves
  • 34 Black Peppercorns
  • 2 Black Cardamom
  • 1 inch Cinnamon Stick
  • 1/2 cup Onion (Thinly Sliced)
  • 4 tbsp Tomato Puree
  • 1/4 cup Yogurt
  • 2 tsp Coriander Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Kashmiri Red Chilli Powder
  • 1/2 tsp Roasted Cumin Powder
  • Salt to taste
  • 2 tbsp Ghee
  • 1 tbsp Lemon Juice
  • 1/2 tsp Garam Masala Powder

Instructions

  1. Clean and wash the greens thoroughly under running water.
  2. Heat water in a large pot.
  3. When the water comes to a boil, add 2 tbsp of salt and 1 tsp sugar to it.
  4. Add the washed greens and cook for 2 minutes.
  5. Remove from heat.
  6. Drain the water and run the greens under cold water.
  7. Drain nicely.
  8. Blend the greens in a blender to make a coarse paste. Keep aside.
  9. Heat mustard oil in a pan.
  10. Add paneer cubes on the pan and fry them until they are slightly browned. Remove and keep aside.
  11. In the same oil, add cloves, black peppercorn, black cardamom and cinnamon and fry for 20 seconds.
  12. Add sliced onion and fry till golden brown.
  13. Add tomato puree and yogurt and cook for another minute.
  14. Now add coriander powder, turmeric powder, red chilli powder, roasted cumin powder and salt to taste.
  15. Add little water and fry for 2-3 minutes.
  16. Add the pureed greens and cook for 30-40 seconds.
  17. Drizzle ghee on top and cook for another minute.
  18. Add lemon juice, garam masala powder and fried paneer cubes and mix well.
  19. Garnish with golden fried onions.
  20. Serve hot with rice or phulka.

Notes

  • For a richer flavor, you can add some cream at the end of cooking.
  • Adjust the spiciness by varying the number of green chillies.
